Cookout provide food safety courses for the outdoor education and expedition market. When planning an expedition we have long lists for risk assessments, budgets and first aid cover. But is food safety on your list? One simple mistake in food preparation could cause an outbreak of food poisoning. This could be disasterous for your expedition and your reputation.
Cookout have developed the NCFE Expedition Food Safety course specifically for the outdoors. This is a nationally recognised certificate and includes food preparation outside, washing up outdoors, water purification and going to the toilet outdoors. We also run the Chartered Institute of Environmental Health Level 1 and Level 2 courses for catering for residential trips.
Helen Littlejohn
Helen Littlejohn is the Director of Cookout, which she established in 2006. She has 15 years experience cooking for and leading conservation, adventure and youth groups in the UK and overseas. Helen has catered for large groups for the National Trust, British Trust for Conservation Volunteers and Adventure Groups, and has cooked for groups from the Moroccan Atlas Mountains to the Australian Kakadu National Park.
Having personally travelled and trekked all over the world, Helen also worked for one of the UK’s leading adventure travel companies for 5 years, leading and managing tours in Asia. As a qualified Summer Mountain Leader, she has led Duke of Edinburgh Expeditions in the UK and overseas. She is a qualified tutor with the Chartered Institute of Environmental Health, is member of the Institute of Outdoor Learning and the Young Explorers Trust.
Jo Roberts
Jo is a qualified teacher and freelance instructor based in Kendal. She has been leading and organising programmes for groups since the late 1990's and has a multitude of outdoor qualifications including Summer ML, Winter ML training, L3 Sea Kayak, APIOL and a qualified NVQ assessor. She has led expeditions for Far Frontiers, World Challenge, managed teams at Loch Eil Outward Bound and is a qualified DoE Assessor.
Lesley Charters
Lesley is a qualified mountain leader and is one of Hampshire's DoE Field and Development Officers. In the past she has led expeditions for World Challenge, worked for VSO in Tanzania and taught chemistry at sixth form level. She now trains on Hampshire Mountain Leader courses and is an amazing yoga teacher.
David Axtell
David runs some of our CIEH Level 1 and Level 2 courses. He has built up a wealth of experience working in the catering trade in pubs, restaurants and care homes, recruiting and training staff and conducting food safety audits. Using fake food and an interative handwashing demonstration, his courses are fun, interactive and informative.
Susan Omar
Susan is a qualified teacher, a CIEH trainer and has a background in food microbiology. She part of the editorial board of the Institute of Biology, reviewing educational books and writing exam papers.

To run our CIEH courses you must already be a registered trainer with the Chartered Institute of Environmental Health. To run our NCFE courses you must have had experience of cooking for groups on expedition in the UK or overseas, have a food hygiene certificate and are used to facilitating groups.
